Ingredients
- 200g Gevity Rx Goodstachio
- 170g (½ cup) raw honey
- 87ml (⅓ cup) milk
- 2 tsp vanilla extract
- 2–3 tsp matcha powder (optional, for colour)
- 50g dark chocolate, chopped
- 600ml thickened cream
- Crushed pistachios to serve
Method
- Mix Goodstachio and honey until smooth. Add milk, vanilla and matcha and whisk until combined. Set aside.
- Melt chocolate over a double boiler. Set aside.
- Whip cream to soft peaks.
- Fold pistachio mixture through cream until thickened.
- Layer ⅓ of the mixture into a loaf tin, drizzle with chocolate. Repeat twice. Top with crushed pistachios.
- Cover tightly with cling wrap and freeze for 4 hours. If freezing overnight, defrost 10 mins before serving and use a hot spoon to scoop.
