Ok we are OBSESSED with this one. honey, pistachio, dark chocolate swirls — no eggs, no refined sugar, no ice cream maker. just a bowl, some beaters and a jar of Goodstachio doing what it does best.

Ingredients
  • 200g Gevity Rx Goodstachio
  • 170g (½ cup) raw honey
  • 87ml (⅓ cup) milk
  • 2 tsp vanilla extract
  • 2–3 tsp matcha powder (optional, for colour)
  • 50g dark chocolate, chopped
  • 600ml thickened cream
  • Crushed pistachios to serve
Method
  1. Mix Goodstachio and honey until smooth. Add milk, vanilla and matcha and whisk until combined. Set aside.
  2. Melt chocolate over a double boiler. Set aside.
  3. Whip cream to soft peaks.
  4. Fold pistachio mixture through cream until thickened.
  5. Layer ⅓ of the mixture into a loaf tin, drizzle with chocolate. Repeat twice. Top with crushed pistachios.
  6. Cover tightly with cling wrap and freeze for 4 hours. If freezing overnight, defrost 10 mins before serving and use a hot spoon to scoop.
