This is one of my favourite recipes ever!  Simple, genius and absolutely delicious - add it to everything!!

Prep 3 min  | Cook 2 Mins  | Serves 8

INGREDIENTS:

METHOD:

  1. Melt butter in microwave or saucepan
  2. Grate zest of lemon & cut lemon in half
  3. Add zest and juice to butter
  4. Chop up pistachios & add to butter, stirring well
  5. Add salt and pepper to taste
  6. Place in fridge for 15 minutes to harden
  7. Remove from fridge, spoon onto baking paper, then roll to wrap
  8. Store in freezer 

NOTES / TIPS:

  •  Take butter out 5 minutes before cutting it up with a hot knife (pour hot water on knife)
  •  Perfect for meat and fish dishes, simply place on top of hot protein
  •  Great for vegetable foil packs
  • Use Lemon & Herb Broth for a herby variation
