These GF, grain free, low carb, coconut flour tortillas are the perfect plate to bring that those Mexican fiestas.

INGREDIENTS:
- Lamb leg 1.5 kg
- ¼ pumpkin - Cubes
- 1 onion - sliced
- 4 garlic cloves - crushed
- 2 tsp Gevity Rx Lemon & Herb Bone Broth Body Glue
- 500 ml water
- 1 tin crushed tomatoes
- ¼ tsp salt + pepper
- ¼ tsp chilli powder
- ¼ tsp paprika powder
- ¼ tsp nutmeg
- 2 avocados
TORTILLAS:
- 80g coconut flour
- 3 eggs
- 80 ml coconut cream
- 80 ml water
- 1/4 teaspoon Pink sea salt
- 80g shredded Parmesan cheese
Salad:
- ¼ cucumber
- 8 cherry tomatoes
- A handful coriander
- A tablespoon lime juice
METHOD:
- Place in slow cooker on high and cook for 6-8 hours. Take out let cool then pull apart with a fork
- To make Tortillas: Mix together in a bowl with an electric whisk then fry up 10x10 cm big tortillas in a frying pan using coconut oil
- Chop up cucumber, tomatoes and coriander, add lemon juice to taste.
- Mash the avocado
- Add avocado mix to tortillas, top with pulled lamb and salad on top.
