Ingredients:

450g salmon fillet, skin off
-
1 tbsp extra virgin olive oil
-
1 tsp sea salt
-
½ tsp black pepper
-
½ brown onion, finely sliced
-
2 cloves garlic, minced
-
¼ cup almond flour
-
2 free-range eggs, whisked
-
1 tsp tamari
-
1 tbsp Dijion mustard
-
¼ cup fresh parsley, finely chopped
-
¼ cup fresh dill, finely chopped
-
1 lemon, zest
Mayo Sauce:
-
½ cup Greek coconut yogurt
-
2 tbsp fresh dill, finely chopped
-
1/2 lemon, juiced
-
Salt and pepper, to taste
What to do:
1. Preheat the oven to 180°C. Place the salmon fillets on a lined baking tray. Drizzle with olive oil and season with sea salt and black pepper.
2. Bake for 12–15 minutes or until cooked through. Let it cool slightly, then flake it finely with a fork.
3. In a large bowl, combine the flaked salmon, onion, garlic, almond flour, whisked eggs, Gevity Rx Great Guts Mayo Sauce, tamari, Dijon mustard, parsley, dill and lemon zest. Mix well until everything is evenly combined.
4. Heat a large pan over medium heat with a drizzle of olive oil. Divide the mixture into 8 equal portions and shape them into patties. Cook the patties for 3–4 minutes per side or until golden brown and crispy.
5. In a small bowl, whisk together all mayo sauce ingredients until well combined. Serves the salmon patties warm with the mayo sauce on the side. Garnish with extra herbs, chilli flakes, lemon zest and sea salt & pepper (optional).
