Forget the sugar filled jelly, there is a new jam in town this summer, and it’s full of gut healing benefits. By using the gelling power of chia seeds, you can now  replace your store bought jam with this home-made low-sugar, spreadable, spoonable jam in about 20 minutes.

INGREDIENTS:

METHOD:

  1. Roughly chop the strawberries
  2. Place the berries in a small pot with the orange juice and bone broth
  3. Heat on the stove to medium heat to bring to a simmer while stirring
  4. Turn the heat down and allow to simmer on low heat for 5mins without the lid, stirring every few minutes
  5. Add the chia seeds and continue to simmer for a further 5-10 minutes, stirring every few minutes
  6. Taste the jam and if you feel you need to add some sweetener (maple syrup) then add some as needed (start with a small amount, re-taste and only add more if you really need to)
  7. Pour into a glass jar and allow to cool on the bench
  8. This jam doesn’t use any added sugar for preservative so it must be kept in the fridge and is good for about 3 weeks
