Nothing says summer like a prawn cocktail. These iconic starters are a great weekend treat or Christmas Day entree - simple, spicy, delicious.

PREP TIME 15 mins SERVES 4

Ingredients:

  • 12 x Mooloolaba Prawns washed, shelled but with tails still attached
  • Cos lettuce leaves
  • 2 x avocados
  • Juice of 1 lime
  • 1 lemon – sliced fine
  • Souped-Up Sriracha Mayo

What to do:

1. Shell prawns, keeping the tails attached

2. Mash avocados, add lime juice then whip to a smooth consistency

3. Arrange lettuce, prawns, avo whip, sliced lemons and a healthy dollop of Souped-Up Sriracha in a cocktail glass or small bowl

TIP : Prepare / shell prawns ahead of time and store in iced cold water with lemon in the fridge until required. This keeps them super fresh and with the right amount of crunch.
