Ingredients:

BBQ Cauliflower:

  • 1/2 head cauliflower

  • 2 cups gluten-free breadcrumbs

  • 1/2 cup gluten-free plain flour

  • 3/4 cup water

  • 1/2 cup Gevity Better Belly BBQ Bone Broth Sauce

  • 1/4 cup raw honey

  • 1 tbsp chilli flakes

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp sea salt & black pepper

Tacos:

  • 6 gluten-free tortillas

  • 1/2 cos lettuce, shredded

  • 2 avocados, cubed

  • 1/2 cup pineapple, cubed

  • 1 jalapeno, finely sliced

  • 1/3 cup pickled red onion

  • 1/3 cup Gevity Rx Better Belly BBQ Bone Broth Sauce

  • 1 Birdseye chilli, finely sliced

  • Fresh coriander, to garnish

What to do:

  1. Preheat your oven to 220°C. Line a baking tray with baking paper.

  2. Bring a large pot of water to a boil. Steam the cauliflower florets for 10 minutes until slightly tender. Set aside.

  3. In a large bowl, whisk together gluten-free flour, water, Gevity Rx Better Belly BBQ Bone Broth Sauce, raw honey, chilli flakes, garlic powder, smoked paprika, sea salt and black pepper until smooth. Add the steamed cauliflower to the bowl and toss until fully coated in the batter.

  4. Place the coated cauliflower on the prepared baking tray and bake for 15 minutes, flipping halfway, until golden and crispy.

  5. Heat each gluten-free tortilla in a dry pan or oven until soft and pliable. Begin layering your taco with shredded cos lettuce, then add the crispy BBQ cauliflower.

  6. Layer with cubed avocado, pineapple, pickled red onions, finely sliced jalapeño and Birdseye chilli. 

  7. Finish with an extra drizzle of Gevity Rx Better Belly BBQ Bone Broth Sauce and a sprinkle of fresh coriander.
