Ingredients
For the mousse:
- 1 block Sweet Guts Chocolate, melted
- 2 large ripe avocados
- 5 tablespoons unsweetened cocoa powder
- ¼ cup unsweetened almond milk
- 1 tablespoon coconut oil
- 1 teaspoon pure vanilla extract
- Optional: 1–2 tablespoons honey or maple syrup for additional sweetness
For serving:
- Fresh raspberries and strawberries
- Coconut yoghurt
- Chocolate shavings
What to Do
-
Melt the Sweet Guts Chocolate and coconut oil in a bowl using the double boiler method. Once the chocolate is almost completely melted, remove from the heat and stir until smooth. Let cool slightly until just barely warm.
-
Halve and pit the avocados, then scoop the flesh into a food processor or high-powered blender. Add the melted chocolate, cocoa powder, almond milk, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides of the bowl as needed.
-
Taste the mixture and, if desired, add honey or maple syrup for extra sweetness. Blend again to combine.
-
Spoon the mousse into serving glasses. For a softer pudding consistency, serve immediately. For a thicker mousse-like texture, refrigerate for at least 2 hours or overnight.
-
Top with fresh raspberries, strawberries, coconut yoghurt, and chocolate shavings before serving.
