Is there such a thing as low carb Sushi? When you ditch white rice for broth infused cauliflower rice then absolutely!

INGREDIENTS:
- 2 x small cans of sustainable salmon or 2 x pieces cooked salmon
- 1/2 a small avocado - sliced
- 2-4 toasted nori sheets
- 1 tbsp pickled radish
- 1 baby cucumber - finely sliced
- 1 small chili - finely sliced
- 1 tbsp sesame seeds
- 1 tbsp of Great Guts Mayo
For the cauliflower rice:
- 2 cups of cauliflower - riced
- 1 tsp coconut oil/ghee(or cooking fat of choice)
- 1 tsp Gevity Rx Natural Bone Broth Body Glue
- 2 cloves of garlic - crushed
- 1 knob of ginger - grated
- 1 tbsp coconut aminos
- Salt and pepper to taste
METHOD:
- Place a fry pan over medium-high heat, add coconut oil/ghee (or cooking fat of choice), garlic and ginger, cook for 2-3 minutes, until slightly golden and fragrant
- Add cauliflower rice, cook for 3-5 minutes, stirring occasionally (do not over-stir or it will go mushy) until cooked through
- Add coconut aminos, broth concentrate, salt and pepper and stir to combine then remove form the heat.
- Arrange in a bowl the rice & salmon & top with the remaining ingredients
- Drizzle with Great Guts Mayo
NOTES / TIPS:
- Can use any source of protein - chicken, tofu, beef, fish
- Substitute toppings for any of your favourites. Personally, I can't go past pickled ginger
