Ingredients:

  • 1 tbsp olive oil

  • ½ brown onion, finely sliced

  • 2 cloves garlic, minced

  • 1 green capsicum, sliced

  • 1 jalapeno, finely sliced

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp cumin

  • 2 tbsp Gevity Rx A.M. Cleanse Bone Broth Body Glue

  • 2 cups baby spinach

  • ⅓ cup fresh parsley

  • 6 large free-range eggs

  • ¼ cup crumbled goats cheese

  • ½ cup fresh herbs (basil & coriander)

  • ½ avocado, sliced

  • Crusty bread, for serving (optional)

  • Lime wedge, to serve

Basil Pesto:

  • ¾ cup fresh basil

  • ¼ cup pine nuts

  • 2 tbsp olive oil

  • 1 tbsp crumbled goats cheese

  • 1 tsp apple cider vinegar

  • 1 tsp sea salt

  • ½ tsp black pepper

What to do:

1. In a high-speed blender, blend all pesto ingredients until smooth. Set aside.

2. Heat olive oil in a large skillet over medium heat. Add the brown onion and cook for 3–4 minutes until softened. Stir in garlic, green capsicum and jalapeño. Cook for another 2 minutes.

3. Season with sea salt, black pepper, cumin, and half of the basil pesto. Add the Gevity A.M. Cleanse and 1.5 cups of boiling water. Stir well to combine and simmer for 5 minutes.

4. Remove from heat and pour the mixture into a high-speed blender. Add the spinach and parsley and blend until smooth.

5. Pour the mixture back into the same skillet and turn the heat to a simmer. Using a spoon, make 6 wells in the mixture. Crack eggs into each well. Cover and cook for 5–7 minutes.

6. Garnish with crumbled goat cheese, fresh herbs, avocado, and the remaining basil pesto. Season with more sea salt, pepper, and chilli flakes (optional). Serve with crusty bread and a lime wedge.
