The green and red in this salad makes such a beautiful Christmas-themed dish. Perfect presented at any Christmas dinner, BBQ and super refreshing in the Aussie heat!

Prep 20 mins | Serves 4-6 as a side dish

INGREDIENTS:

  • 3 cups watermelon balls
  • 1-2 small Lebanese cucumbers diced
  • 1 cup packed basil leaves
  • 1/2 a batch Cultured Lemon & Herb almond "Feta" (or dairy free cheese option of your choosing)

    DRESSING:

  • 2 Tbsp Balsamic Vinegar
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 tbsp Gevity Rx Lemon & Herb Bone Broth Body Glue
  •  

    METHOD:

  • In a small bowl, whisk all dressing ingredients till combined
  • Use a melon-baller to create your watermelon balls. If you don’t have one simply cut the watermelon into 1-inch cubes
  • Add watermelon balls, diced cucumber and basil leaves to a large bowl and toss gently to combine
  • Once on serving tray add chunks of the almond feta to decorate and drizzle with the dressing
