Ingredients:
- 4 Tbs KFC Spice Blend (see below)
- 2 large free-range chicken breasts - halved
- 200g gluten-free flour
- 4 Large Eggs
- 150g gluten-free breadcrumbs
- Salt & Pepper
- 4 gluten-free Burger Buns
- Shredded Lettuce
- Great Guts Mayo
KFC spice mix ingredients:
- ½ tbs Basil
- ½ tbs Oregano
- 1 tbs Ground black pepper
- 4 tbs Smoked Sweet Paprika
- 1 tbs Mustard powder
- 1 tbs Salt
- ½ tbs Thyme
- 1 tbs Celery salt
- 3 tbs White ground pepper
- 2 tbs Garlic powder
- 1 tbs Ginger powder
What to do:
- Place chicken breasts on a clean chopping board and slice in half. Season with salt & pepper.
- Set up your KFC assembly line - you’ll need 3 bowls. In bowl 1, crack eggs and whisk with a fork. Place flour in bowl 2, and in bowl 3, combine breadcrumbs with the spice mix.
- Starting with your first piece of chicken, load into the flour mixture, then the egg, and then the breadcrumbs bowl. Make sure each piece of chicken is well coated from each bowl.
- Pop the chicken into the air fryer basket in a single layer. Cook for 12 minutes at 180c, then turn and cook for a further 5 minutes at the same temperature.
- Now for the fun part. Add Great Guts Mayo to the bun base, add some shredded lettuce, and add the chicken. Pop on your burger lid (don’t forget some extra mayo!), and you are ready for serving.
