This quick one-pan paella is great for a mid week dinner! Gluten, sugar and dairy free!
500g diced chicken breast
1 small red onion, diced
1 tsp garlic
2 cups water
250g cooked microwave rice
2 cups baby spinach
1 cup peas
1 cup corn
1 capsicum, diced
1 punnet of cherry tomatoes .
Optional: 3 tsp your fave spices (I used turmeric, paprika and harissa for some colour)
- Combine 2 tsp of with hot water and set aside
- Cook onion, garlic and chicken in some olive oil until brown
- Add in all the other ingredients including the Lemon and Herb Bone Broth Body Glue and simmer until veggies are cooked
- Enjoy topped with fresh herbs and lemon
