This vibrant Beetroot Soup is as nourishing as it is delicious. Ingredients:

1 tbsp olive oil

1/2 red onion, chopped roughly

2 large beets, peeled and cut into 3cm cubes

2 cloves garlic, minced

1 tbsp fresh ginger, minced

2 tsp ground cumin
-
1 tsp black pepper
-
1 tsp sea salt
-
3 tbsp apple cider vinegar
-
¼ cup hemp seeds
-
¼ cup Greek coconut yogurt
-
⅓ cup fresh herbs (coriander & dill)

Lime wedge, to serve
What to do:
1. Heat olive oil in a large saucepan over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
2. Add the beetroot cubes to the saucepan along with the garlic, ginger, cumin, black pepper and sea salt. Stir well to coat the beets in the spices.
3. Pour in the Gevity Bone Broth Body Glue Boost and stir to combine. Add the apple cider vinegar and cook for 1–2 minutes to enhance the flavour.
4. Pour in 6 cups of boiling water, bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 25–30 minutes, or until the beets are fork-tender.
5. Using a high-speed blender or an immersion blender, blend the soup until silky smooth. Adjust seasoning if needed.
6. Divide the soup between bowls. Dollop the coconut yogurt on top, then use a sharp knife to create marble swirls.
7. Sprinkle with hemp seeds, coriander and dill. Serve with a lime wedge on the side.
