Serves 4
Ingredients:
2 tbsp extra virgin olive oil
1 brown onion, finely sliced
4 garlic cloves, minced
1 tsp sea salt
1/2 tsp black pepper
250g artichoke hearts
1/2 cup sun-dried tomatoes
1/3 cup Gevity Rx A.M. Cleanse Body Glue
1 lemon, juice & zest
2 free-range chicken breasts
1/2 cup full-fat coconut cream
Fresh parsley, to garnish
Crusty bread, to serve (optional)
What to do:
1. Heat the olive oil in a large pot over medium heat. Add the sliced onion and garlic, season with sea salt and black pepper and cook for 5–6 minutes until soft and fragrant.
2. Stir in the artichoke hearts and sun-dried tomatoes. Add the Gevity Rx Bone Broth Body Glue and pour in 4 cups of boiling water, stirring to dissolve.
3. Add the chicken breasts directly to the soup. Bring to a gentle boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.
4. Remove the chicken breasts and set aside to cool slightly. Once cool enough to handle, shred with two forks, then return the shredded chicken to the pot.
5. Stir in the lemon juice, zest and coconut cream. Simmer for another 2–3 minutes to warm through and bring the flavours together.
6. Ladle into bowls and garnish with fresh parsley. Serve with crusty bread if desired.
