Serves 4⁠

Ingredients: 
2 tbsp extra virgin olive oil⁠
1 brown onion, finely sliced⁠
4 garlic cloves, minced⁠
1 tsp sea salt⁠
1/2 tsp black pepper⁠
250g artichoke hearts⁠
1/2 cup sun-dried tomatoes⁠
1/3 cup Gevity Rx A.M. Cleanse Body Glue⁠
1 lemon, juice & zest⁠
2 free-range chicken breasts⁠
1/2 cup full-fat coconut cream⁠
Fresh parsley, to garnish ⁠
Crusty bread, to serve (optional)⁠

What to do:
1. Heat the olive oil in a large pot over medium heat. Add the sliced onion and garlic, season with sea salt and black pepper and cook for 5–6 minutes until soft and fragrant.⁠
2. Stir in the artichoke hearts and sun-dried tomatoes. Add the Gevity Rx Bone Broth Body Glue and pour in 4 cups of boiling water, stirring to dissolve.⁠
3. Add the chicken breasts directly to the soup. Bring to a gentle boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.⁠
4. Remove the chicken breasts and set aside to cool slightly. Once cool enough to handle, shred with two forks, then return the shredded chicken to the pot.⁠
5. Stir in the lemon juice, zest and coconut cream. Simmer for another 2–3 minutes to warm through and bring the flavours together.⁠
6. Ladle into bowls and garnish with fresh parsley. Serve with crusty bread if desired.⁠
